The Spergola grape variety derives its name from the fact that its primary clusters are always accompanied by a smaller cluster, resembling a wing. Spergola has been present in Emilia-Romagna since the 15th century, although in more recent years it has been progressively abandoned or, in some cases, confused with Sauvignon Blanc. DNA analysis has definitively demonstrated its genetic uniqueness, allowing it to be officially registered and included in the DOC Colli di Scandiano e Canossa.
Spergola was once on the brink of extinction, but it has been miraculously saved through reproduction from a few phylloxera-free vines, grafted onto American rootstock.
From Spergola, a wine is produced with a pale straw-yellow color, a delicate floral aroma with hints of apple, and a fresh taste with good acidity. With slight over-ripening, Spergola develops more complex and elegant aromas, revealing good structure, balance, and aromatic persistence.
Its vinification styles range from sparkling to semi-sparkling or dessert wine, while always maintaining structure and freshness. Spergola pairs well with appetizers, fish-based first courses, stuffed pasta, light main courses, and charcuterie. It also complements Parmigiano Reggiano in its dry version. The sweet version pairs wonderfully with baked desserts, cookies, or zuppa inglese.
